Got home late just the other day and the sounds of 4 rumbling tummies were too much to bear. Need food. Fast.
A recipe that has no recipe is really what I needed right there and then. And I had just the perfect one in my pocket…
I used a nice slab of salmon fillet from the freezer that was nicely cleaned and deboned by the Husband.
Preheat the oven to 200 degree celcius while cleaning some assorted vegetables.
Sprinkle some olive oil and a little salt (I skipped the salt) on the salmon. Spread it evenly on the fish. Put the fish in the middle and toss the vegetables around the fish.
Pop the tray into the oven. Depending on the thickness of the fish, bake for 15mins or until the fish is throughly cooked. Broil for another 4-5mins for that extra crunchy crispy salmon skin.
Done. Serve on tray. Saves time on the wash up. 😉
